La Rayúa Restaurant was inaugurated in 2014 but has become one of the shrines of the capital's favourite plate. The Verdasco family, owners of the restaurant, are masters in the elaboration of the cocido madrileño and boast more than 150 years experience in the catering business. At this central eatery situated next to Gran Vía, you will sample this traditional dish in a warm and cosy atmosphere.
El cocido madrileño
El cocido is Madrid's most well-known dish. Cooked with chickpeas, chorizo, bacon, potatoes, ham bone, beef shank, cabbage, chili peppers, tomato sauce and noodles, it is a staple part of the inhabitants' eating habits.
At La Rayúa, the stew is prepared in individual clay pots that are gently heated over an oak charcoal grill. The traditional way to eat the stew is in two stages or servings: first the noodle soup of the stew, and then the chickpeas, meat and cabbage.
To finish, for dessert, you can try the delicious apple profiteroles with nougat ice-cream.
